This unique variety is grown in Peru in the inter-Andean valleys and the central coast and grows between 1,200 and over 4,000 meters above sea level (4,000 ft to 14,000 ft). The principal growing areas are in Lima, Ancash and Arequipa.

How to use Purple Corn

Native South Americans have been using the dyes, known as anthocyanins, to colour food and drinks for centuries.

Our organic raw purple corn flour is created by drying and then milling the purple corn kernels. It is good for use wherever you use wheat or other flours, and also great in raw chocolates and breads etc.

Purple corn flour can be used wherever you would use regular corn flour, corn meal, or as a substitute for other flour to give your favourite corn based dishes an extra antioxidant burst. It can be used in raw chocolates, breads, tortillas, pancakes and cakes. It will add an amazing colour to your traditional recipes while boosting the nutritional value.

This is a traditional Peruvian Purple Corn Recipe:

Api Morado Breakfast

Api Morado is served as a breakfast cereal. Thick and hearty, it can be served hot or cold. Usually accompanied by pastry. It’s delicious, with a sort of “grape” flavour. A traditional Andean treat.

Ingredients:
2 cups purple corn flour
15 cups water
1 cup diced pineapple
2 sticks cinnamon
2 whole cloves
2 tsp orange peel
Natural sweetener to taste

Instructions:
Soak flour in 6 cups of water for 2 hours. Boil remaining 9 cups of water with the cinnamon, orange peel & cloves while soaking flour.

Add 6 cups of soaked corn flour to the cinnamon water (remove spices).

Cook together, stirring constantly until just a little thick. Stir in sweetener and chopped pineapple and serve.

This can be refrigerated and served cold. Either way it is thick, hearty, healthy and delicious.
