Organic Rapadura Sugar (Panela Sugar)
Organic Rapadura Sugar is a traditional unrefined cane sugar produced by gently evaporating freshly pressed sugar cane juice. Unlike refined white sugar, the natural molasses remains present in the finished product, giving Rapadura its characteristic golden-brown colour and rich caramel-like flavour.
Also known as Panela Sugar in some regions, Rapadura is valued for its minimal processing and distinctive taste, making it a popular choice for baking, beverages and a wide range of food applications.

What is Organic Rapadura Sugar?
Organic Rapadura Sugar is made from the juice of organically grown sugar cane. After harvesting, the juice is extracted and carefully concentrated through evaporation before being dried into granules. Because the sugar is not refined, the natural molasses content remains intact.
The result is a free-flowing sugar with a deeper flavour profile than conventional white sugar. Rapadura and Panela are often used interchangeably, although the name used can vary depending on the country of origin and local traditions.

Organic Rapadura Sugar is chosen for its natural character and rich, full-bodied sweetness. It delivers gentle caramel and toffee notes that make it a more flavourful alternative to refined white sugar, while still working in the same way in everyday cooking and baking.
When compared by glycaemic index (GI), Rapadura typically sits in the range of around 55–65, depending on the exact product and natural variation in molasses content. This places it in a broadly similar range to refined white sugar, including caster sugar, which is usually around 65–68 GI. By comparison, pure glucose (dextrose) has a GI of 100, as it is absorbed very rapidly by the body.
While Rapadura is not a low-GI sweetener in a strict sense, it is less processed than refined white sugar and retains more of the natural components of sugar cane juice, including its molasses content. This is what gives it its deeper flavour and more traditional character. It should still be treated as sugar in nutritional terms and enjoyed in moderation as part of a balanced diet.

How to use
Organic Rapadura Sugar can be used much like regular sugar in everyday cooking and baking. It dissolves well in hot drinks such as tea, coffee and hot chocolate, and can also be used in baking cakes, biscuits and desserts where a deeper sweetness is preferred. It blends easily into smoothies and shakes, and can be added to sauces, dressings and marinades to round out flavours and add subtle caramel notes.
Its naturally rich taste means it is particularly useful in recipes where a more complex, unrefined sweetness is desired.
