Our organic cocoa powder, grown in Peru, is made from the Criollo variety of cocoa bean.
After roasting and shelling, the cocoa beans are ground to make cocoa liquor/paste, this liquor hardens to an unsweetened, chocolate-like consistency when it cools to room temperature.

Pressure and heat is then applied to the cocoa liquid to separate the ‘butter’ from the ‘cake’, leaving a solid yellow cocoa butter and the soft, powdered cocoa powder (the cake). Organic cocoa powder is commonly used in food preparation, especially in cakes, desserts and hot chocolate, and in its natural form has a bitter, unsweetened taste.
