100% natural raw fruit sugar is found in agave syrup, maknig this sweet syrup from Mexico the perfect alternative to sugar. Agave has a low glycemic index and releases energy slowly into the body (2tbsp = 30 on glycemic index).
Our dark agave has a rich, caramel flavour, unlike the golden versions, which tend to just taste sweet.
Agave can be used as a replacement sweetener for sugar or honey in baking, desserts, drinks and raw food recipes. Use as a 1:1 replacement for sugar, then adjust to your own personal taste. Some chefs prefer to use 75% as much agave nectar as they would sugar in a recipe, but others prefer a straight 1:1 replacement.
Reduce the other liquids in a recipe by up to 30%.
